Main Dish

Fiesta Rice
2 1/2 cups water
3/4 teaspoon sea salt
1 cup brown rice
1 cup tomato puree
1/2 cup finely chopped onion
1 - 4oz. jar pimentos
1/2 teaspoon cumin
1/4 teaspoon fresh garlic minced
Bring water and sea salt to boil in saucepan and add brown rice. Reduce heat to lowest setting and simmer covered 50 minutes or more until water is used up and rice is tender.
Then stir in tomato puree, onion, pimentos, cumin and garlic. Continue cooking for 20 minutes, stirring occasionally to prevent burning. Serve hot.

Curried Cod
1 lb. cod, cut into pieces
3 tablespoons organic butter

3/4 to 1 cup minced onion
1 cup soy milk (plain)
1/2 teaspoon sea salt
dash of pepper
1 tablespoon curry powder
1/2 cup soy nuts or cashews
2 cups unsweetened pineapple chunks
2 cups cooked brown rice
Saute onion in butter. Add fish. Cover and cook 4 to 5 minutes, until it flakes easily. Mash cod. Add soy milk and seasoning. Stir in  nuts. Cover and simmer 1 to 2 minutes. Add pineapple; simmer 1 to 2 minutes longer. Serve over brown rice.


Vegetable Dish

Cucumber Salad
1 large cucumber peeled and diced
1 large tomato diced
1 small onion, chopped fine
1 tablespoon fresh parsley, minced
2 tablespoons olive oil
1 tablespoon lemon juice
1 tablespoon minced garlic
sea salt and pepper to taste
Combine all ingredients. Chill before serving. Serves 2.


Missing Egg Sandwich
This sandwich looks and tastes like egg salad but without the fat and cholesterol.
1 cup firm tofu (1/2 pound) mashed
1 green onion finely chopped
2 tablespoons pickle relish
2 teaspoons Dijon mustard
1/4 teaspoon each: Cumin,tumeric, garlic powder
8 slices of whole wheat bread or any whole grain bread
4 lettuce leaves
4 tomato slices
Combine all ingredients and mix thoroughly. Serve on whole grain bread with lettuce and tomato.


Fruit

Apple Crisp
6 to 8 apples, sliced
1/2 cup raisins
1/2 cup water
1 cup rolled oats
1/2 cup whole wheat flour
1/2 cup wheat germ
1/2 cup organic butter
1/2 cup honey
2 teaspoons cinnamon
Put sliced apples in buttered 9x13" pan. Sprinkle with raisins and water. Combine the rest of the ingredients. Sprinkle evenly over apples. Bake at 350 degrees for 30 to 40 minutes or until apples are soft. Serve warm or cold.


Blueberry Sauce
Bring the following to a boil in a saucepan:
2 Cups fresh or frozen blueberries (unsweetened)
1/4 Cup water
1 Tablespoon Honey
1/4 teaspoon sea salt (optional)
1/4 teaspoon Vanilla

Meanwhile, combine the following in a separate container, stirring until cornstarch is dissolved:
1/4 cups water
1 Tablespoon cornstarch

When berries come to a boil, add the cornstarch mixture and stir constantly until it returns to a boil. Remove from heat. Serve hot over oat waffles or whole wheat pancakes.


Cookies

Haystack cookies
4 cups unsweetened coconut
1/2 cup oatmeal
2 1/3 cups walnuts chopped
5 cups dates, chopped
1 1/3 cup whole wheat pastry flour
1/3 teaspoon sea salt
1 1/3 cup cold water
1 1/2 cup natural peanut butter
1/2 cup honey
2 teaspoons vanilla
Mix all ingredients. Line sheet  pans with baking paper. Use a ice cream scoop to place on pans, one scoop per cookie. Bake in 350 F. oven for 25 minutes or until light brown.

Natural Oatmeal Raisin Cookies

Ingredients:
1/2 cup organic butter, softened
1/2 cup honey
1 brown egg
1 teaspoon  organic pure vanilla extract
3/4 cup stone ground whole wheat flour
1/2 teaspoon baking soda
3/4 teaspoon ground cinnamon
1 1/2 cups quick-cooking oats
1 apple, cored a chopped
1/2 cup baking rasins

Directions:Preheat the oven to 375 degrees F (190 degrees C). In a large bowl, cream together the margarine, honey, egg and vanilla until smooth. Combine the whole wheat flour, baking soda and cinnamon; stir into the creamed mixture. Mix in oats, apple and raisins. Drop by teaspoonfuls onto non-stick cookie sheets.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.



Salad Dressing

Cucumber Salad Dressing
1 small cucumber chopped very fine
1 small onion chopped very fine
1/2 cup soy mayonnaise
1/2 cup soy milk (plain)
Sea salt to taste
Combine all ingredients and mix well. This recipe whips up nice in a blender at low speed. Refrigerate to chill before using.



APPLE MUFFINS

2 unpeeled apples, chopped
1/2 cup honey
1 egg beaten
1/4 cup peanut oil
1 cup soy milk (plain)
1 3/4 cups whole wheat flour
1/2 teaspoon ground cinnamon
1/2 teaspoon sea salt
2 teaspoons baking powder
1/4 cup wheat germ
Put chopped apples in a bowl and pour honey over them. In a large bowl, mix together the egg, oil and soy milk. Sift in flour, cinnamon, sea salt and baking powder. Add wheat germ and stir just enough to moisten. Fold in apples. Bake in greased muffin tin cups at 400 degrees for 20 to 25 minutes. Makes 12 to 16 muffins. You can add raisins or nuts to this recipe also.


Milkless, Eggless Doughnuts

Peanut oil for frying
1 cup water
1/4 cup peanut oil
1/2 cup honey
6oz tofu
3 cups whole wheat flour
1 tablespoon baking powder
1/2 teaspoon sea salt
1/2 teaspoon nutmeg

Begin heating peanut oil to 375 degrees. In a deep heavy  saucepan to reach 2-inch depth. Meanwhile as oil heats, start mixing the doughnuts.
Stir the water,oil, and honey together in a large mixing bowl. Beat in the tofu, then add the flour, baking powder, sea salt and nutmeg all at once stir just enough to blend. Roll dough to 1/2 inch thickness on a floured surface, adding a little extra flour, if needed, to prevent sticking. Cut doughnuts out. Drop carefully into the hot oil. Do not crowd! Turn frequently until doughnuts are golden brown all over, then drain on paper towels.If desired , you can put a glaze of honey or spread natural peanut butter on top of the doughnuts. Another suggestion: spread natural fruit spread on top of doughnuts.

Bread

Applesauce Bread

1 cup unsweetened applesauce
½ cup peanut oil
½ cup honey
1 teaspoon organic vanilla
2 brown eggs
1 ½ cup whole wheat flour
1 ½ cup rolled oats
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon cinnamon
¼ teaspoon nutmeg
½ cup raisins
½ cup sunflower seeds or chopped nuts

Beat together butter and honey. Add eggs, mixing well. Add vanilla and applesauce. Combine dry ingredients, raisins and nuts, add to liquid ingredients. Bake in greased 9x5x3 loaf pan at 350 degrees for 55 minutes. Allow cooling in pan 20 minutes. Turn out onto wire rack. Wrap and store overnight before slicing.



Peanut Butter Topping

This is good for dipping fruit in or over a natural frozen dessert.
1/2 cup natural peanut butter
1/4 cup brown rice syrup
2 Tablespoons soy milk (plain or vanilla)
2 Tablespoons organic butter
Mix the above ingredients in a small saucepan.Cook and stir over medium heat just until the peanut butter and butter melt. Serve warm. Makes 3/4 cup.


Peanut Butter Frosting
1/2 cup natural creamy peanut butter
5 Tablespoons organic Butter, softened
2 Tablespoons Honey
1 to 3 Tablespoons vanilla soy milk
Beat peanut butter, organic butter and honey in a bowl. Add soy milk, gradually, only if needed, until  the frosting is easy to spread. Spread on cake or cupcakes.
